Beneath the chocolate lies velvety ice cream, creating a moment that’s indulgent and unmistakably Magnum. These bars aren’t just frozen treats; they’re crafted experiences, made with world-class ingredients and attention to detail, designed to turn a simple snack into a moment of pure pleasure.
The Craftsmanship Behind Magnum Ice Cream Bars
The Signature Chocolate Coating
Every Magnum bar is defined by its iconic thick chocolate coating, crafted from cocoa sourced exclusively from Rainforest Alliance-certified farms.
Our farmers handpick only the ripest cocoa pods — having worked on small, family farms for generations, they know a promising pod when they see one. Each pod contains 30 to 50 cocoa beans. They carefully cocoon the extracted beans inside banana leaves and leave them to ferment for eight days, to bring out the beans’ fruity flavor and smell. After the beans have dried, the best ones are singled out to ensure only the finest make it to the next step.
Once they’ve been roasted, the beans are ground into a cocoa paste and blended with the unique Magnum recipe that our chefs have perfected over decades. Then, they’re ready for conching, a process that mixes the ingredients for hours with great care until they reach the perfect texture and flavor, and the chocolate emerges refined and silky, ready to meet our ice cream.

The Creamy Ice Cream Core
The vanilla beans used in our ice creams come from the fertile SAVA region in Madagascar, the basis of our rich and velvety vanilla ice cream. The vanilla orchids are hand-pollinated by local Rainforest Alliance farmers, one flower at a time.
Once the pods are ripe and harvested, they’re bathed in hot water. Then, they are laid under the sun every day and rolled into blankets every night for 35 days.
After drying, they are cured in wooden crates. When sliced, the pods reveal countless black, caviar-like vanilla seeds that exude the sweet and floral aroma that gives our vanilla ice cream its signature flavor.
The Layering Process
Each Magnum bar is crafted with precision. First, the ice cream is shaped and frozen to provide a stable core. It’s then coated in just the right amount of chocolate at the perfect temperature to flow cleanly over the surface. This forms the glossy shell that’s the ideal thickness to deliver that signature Magnum crack, a sound and sensation that’s become synonymous with indulgence.
In our Magnum Doubles collection, we take the process even further. A luscious sauce layer, like tart raspberry or gooey caramel, is added between the ice cream and the chocolate to provide a contrast of texture and flavor.
